  • 6 slices bacon
  • 1/4 pound ground sausage
  • 6 eggs
  • 3 tablespoons heavy cream
  • 1 ½ cups shredded cheese Your choice
  • 1/2 Medium Avocado chopped optional
  • 8 flour or corn tortillas

For Salsa

  • 1 tomato diced
  • 1/2 onion diced
  • 1 Serano pepper diced
  • cilantro chopped
  • Lime Wedges


  • Heat large nonstick skillet over medium-high heat until hot.
  • Place tortilla on hot grill, add about 4 Tablespoons of cheese.
  • When cheese starts to melt add cooked sausage, bacon and eggs.
  • Flip tortila to other side, allow to evenly brown on both sides.
  • Enjoy Plain or with salsas and extras of your choice.


  • Combine diced tomatoes, serrano pepper, onion and cilantro. Squeeze on lemon juice and add to prepared quesadilla if desired.
