Preparing Rotisserie Chicken Cobbler

Preheat and Prep the Oven

Step 1: Start by preheating your oven to 350°F (175°C). While the oven warms, place a stick of salted butter in a 9-by-13-inch baking pan. Slide the pan into the oven, allow the butter to melt completely. This not only greases your pan but also adds a rich, buttery layer to the bottom of your cobbler.

Prepare the Chicken and Veggies Layer

Step 2: Carefully remove the hot pan from the oven. Evenly spread the shredded rotisserie chicken over the melted butter, creating the first layer of your cobbler. Next, sprinkle the frozen peas and carrots (or your chosen vegetable mix) over the chicken. Remember, this layering builds the foundation of flavors and textures for your cobbler.

Create the Biscuit and Liquid Layers

Step 3: In a mixing bowl, combine 2 cups of the Red Lobster Cheddar Bay biscuit mix with 2 cups of milk and the seasoning packet included in the mix. Stir until just combined. Gently pour this mixture over your chicken and vegetable layer, spreading it evenly; this will form a tender, savory crust as it bakes.

In another bowl, whisk together the chicken stock and cream of chicken soup until smooth. Then carefully pour this over the biscuit layer, creating the final liquid layer. It’s crucial not to mix these layers; each plays a distinct role in the cobbler’s texture and taste.

Bake, Rest, and Enjoy

Step 4: With all layers assembled, bake the cobbler uncovered in the preheated oven for 45-50 minutes. The top should turn golden and bubbly. It may appear a bit runny initially, but allow the cobbler to rest for 10-15 minutes after baking. This will enable the sauce to thicken to a gravy-like consistency. You may wish to finish with cracked black pepper for an extra kick of flavor.

This Rotisserie Chicken Cobbler, with its comforting layers of creamy, savory goodness and biscuit topping, is more than just a meal. It’s also a heartwarming experience. Serve it hot and watch it disappear — sure to become a cherished recipe in your comfort food collection.
